These Gluten-free Quinoa Potato balls are super filling, delicious and perfect as a healthy snack or appetizer that the whole family will love. Made with mashed potato, quinoa, nutritional yeast and herbs.
Ingredients:
1 cup cooked quinoa
1/2 white onion, finely chopped
1 tbsp nutritional yeast
1/2 teaspoon garlic powder
1/4 teaspoon sea salt
1/4 tsp basil, finely chopped
1/2cup mashed potatoes
Instructions:
1.Preheat oven to 350° F. Spray cookie sheet with cooking spray.
2.Cook the quinoa per the package directions.
3.Mix the nutritional yeast, garlic powder, sea salt, onions, basil and cooked quinoa. Add the mashed potatoes and work through until thoroughly combined. Form balls and place onto the prepared baking sheet.
4.Bake 18-22 minutes. Oven temperatures vary, so keep an eye on the poppers to prevent burning.
5.The outsides will be a bit crispy. Cool slightly before using a spatula to ease them from the cookie sheet. The insides will still be hot.
6.Enjoy plain or with your favorite gluten-free salad dressing, dip or hummus.
